cheddar bagels

finally my blog is up! yay! first of all i have to tell you guys that English is not my native tongue so if there are mistakes in spelling or grammar please bear with me.  my first recipe that I'm going to post is not entirely mine i saw this post at ginnys lc kitcken she use this for a bun , i don't have nutritional yeast and i don't want wine in my bread so i just substitute and omit some of her ingredients, also she uses a machine called gt express, i don't have that either so i just bake mine and i add cheddar cheese to add chew in the bread.

recipes:
4 large eggs
4 teaspoon coconut oil or any oil you prefer
2 tablespoon white vinegar ( you wont taste this)
1/2 cup Parmesan cheese 
1/4 cup almond flour
2 table spoon of psyllium husk powder ( if you don't have this you should stock your pantry it does wonderful for bread recipes)
1 teaspoon of baking powder
2 packet of sweeteners
grated cheddar cheese ( enough for 6 bagels or 6 muffin tops)

pre heat your oven at 350 F
greased your donut pan or a muffin top pan
mix all the ingredients together
divide your batter to 6 donut pan or muffin top pan filled it 2/3 because it will rise, that's the magic of psyllium husk
then let it sit for about 5 minutes or more or till your oven reach the right temperature so that the baking soda can activate
bake for 15 minutes then turn off your oven and turn on the broiler, take out the bagels from the pan, it will be hot so be careful, i used bamboo bbq stick to do this job easily then on a broiler safe pan arrange the breads, top it with  grated cheddar cheese and broil it until cheese turn a little brown, try not to skip this process because the cheddar cheese add chew and texture to this bread. cool it down and put in a seal container so you can store it in the fridge. i actually like this out from the fridge then i put it in the toaster to heat it up a bit, it adds a little crunch that this bread needs.

carbs:     pysillium husk is 9g, dietary fiber is 7.5g so net carbs is 1.5g
               almond flour has 6g, dietary fiber is 3g so net carbs is   3g
                eggs 1.56g
               total carbs  6.06 g divide for 6 serving is 1.01 g of carb

  1. Hi Vicstron here :) I have to say that those bagels looks fantastic. Gonna make them some other day, now its almost 22.30 and I have to get some rest Before getting up at 06:30. Anyway just wanted to check in on your site and sey hello :)A question Before I go, do you Think I cam make the bagels without sweetener and in a cupcake shape instead of bagel? Dont have any bagel molds :( Im gonna get even lower in carbs, the psylliumhusk I have are carbfree :) Every carb Counts ;) Have a nice day/night dont know when youll read this, bye for now!

    1. yes you can make it without the sweetener :)im thinking if your goin to make it in a cupcake form you need to adjust your cooking time, the metal in the middle of the donut mold helps it to cook a little bit faster so i dont know maybe another 5 to 10 minutes depending on how big and full is your cupcake tin :) thank you for those yummy recipe that you sent me i will definitely goin to check those out :)

    2. Gonna adjust the oventime then, maybe mum has a type of bagelshaped forms just smaller( i Think the forms is used when you make shortcakes, smaller .then i can have 2 ;))

    The recipe for the walnutbread comes here :)

    For 1 loaf youll need

    12 eggs
    50 gr melted butter
    150 ml coconutflour
    45 ml(3 tbs) psyllium husk
    15 ml(1 tbs) bakingpowder
    5 ml(1teaspoon)salt
    100 ml fibrex flakes ( its made from potatoes, looks like small oatmeall)
    200 ml walnuts

    Whisk the egg untill very fluffy poor in the melted butter. Measaure up all the dry ingridients in a separate bowl, then blend the dry into the egg. blend well until all is mixed into a batter. let it rest for atleast 15 minutes. Use a bakingsheet and put the dough on the sheet, rinse your hands under water and shape the dough inte a loaf( with a little water on your hand its much easier ;)) when satisfied with loaf make some knifesmark over the loaf. bake in the middle of the oven for about 40-45 minutes in 350 degrees (175 degrees in sweden)
    sprinkle some coconutflour on the bread when done.

    Yhe onlu thing im thinking about is if you have the fibrex stuff, but otherwise you maybe have something lowcarb that looks like flakes

    1. i have everything except for the fiber flakes :( i wonder where can i get those..il check some online.. do you think of anything i can substitute with that?

    2. I Went to my pantry anf got the fibrex box. Its NOT from potatoes( thats Po fiber ,sorry) the fibrex flakes are the fibers from sugar beet( dont know if tkats the correct term, not sugar canes but the beets that grown in the soil)
      So maybe youll can find it in the stores. My brands is from the big Company that makes all the diffrent sugartypes. well its a good thing they dont waste useful stuff :)

      check if you can find some, otherwise I can send you a box!matbe send you some Po fibers to, if thats not available where you live. you live In Us right?

    3. i check online which is amazon.com where they have almost everything but i could not find the fiber flakes. yes i live in u.s but its ok you dont need to do that :) your so nice though for offering it :)

  3. Almondbread made in microwave

    1 bread

    1 egg
    100 ml almondflour (about 45 gr)
    25 gr melted or soft butter

    mix Everything together in a bowl with a fork.
    put it on a plate ( i use a bit of bakingsheet underneat)
    size a bit bigger then your palm.Hard to be exact ;) put in the Micro for about 100 seconds or maybe 30 secs more. depends on Micro. after a couple of times you know exact. my bread takes 107 secs :)
    if you want you can fry the bread in a fryingpan. gets a bit colour and its okay that way to.last time i tried it on the stove I had some cinnamon on it and ate like a sort of cake :)
    Theres no end to the possibilities ;) Sorry for my bad Spelling, hope youll understand

    2. made some eggplats filled with onion,garlic eggplant"meat" Cherry tomatoes and a dash of White wine. topped it with some gruyerecheese Omnom it was delish :) caulimash next time ;)

  4. Question.. could you just make this as a small 'loaf' of bread? Instead of individual pieces? Just thinking it would make a good sandwhich substitute for the kids
